Last night, I started working on Holiday sweets to happily consume, and to give away to family and friends. And as I bake and “taste”, my spin class schedule gets amped up as well.
But I don’t want to feel I need to justify anything when I tell you about this Peppermint Bark that I make each year, and made a batch last night.
My baking list is lengthy, so I decided to start off with an easy recipe, and too, I had a lot of candy canes around. Just made sense to go minty.
This Peppermint Bark recipe only has 3 ingredients, all of which pack a punch. Melt the white chocolate in a double boiler. Add some peppermint extract and crushed candy canes to the melted chocolate. Pour the bark on a baking sheet to harden, and voila. You’ve got yourself some Peppermint Bark.

Both of these sweets are festive, and will look great nestled in that cookie box you are giving away — that is, if there is any bark and chocolate covered candy canes left to give. But hey, if your taste testing got a little out of hand, you can always make another batch!
