They are checking for doneness, and here is how you can gage using your own hand.
This Quick Tip Friday works on all types of meat: Chicken. Beef. Pork. Lamb.
Lightly touching your pointer finger to your thumb, press on the thener space of your hand as pictured below. This is how a rare piece of meat feels rare:
Want your streak a little more cooked? Lightly press your middle finger to your thumb. This is medium rare.
Are you a well done kind of person? Lightly touch your pinky to your thumb. This is what well done feels like.
Now you know how to gage doneness for grilling and cooking meat.
