Did you know that duck eggs have twice the nutritional value than chicken eggs.
Yes, this is true.
I have found that whenever duck eggs come up in conversation with people (not too often), they frown upon the thought of eating one. Such was the case with Sean and the kids. Sean turned up his nose, and the kids started quacking. And quacking to the point where I dropped the subject.

But I really wanted to try a duck egg to see what I thought, what they tasted like.
So I went to a local farm and bought a half dozen, not telling a soul in this house what they were about to consume. Seriously, if I was going to try one, it was going to be a group effort.
That evening, I poached the duck eggs for 3 minutes in boiling water, carefully scooped them out with a slotted spoon, and dabbed the excess water on paper towel. I had a toasted English muffins on stand by with a layer of sautéed spinach, then topped with the egg. I added crispy prosciutto to go along for the ride.
Everyone cleaned their plate. Not a single question was asked. The duck eggs were delicious!
I did tell Sean right away that he had just enjoyed a duck egg, but the kids still are “in the dark.”
What I found, is that duck eggs are richer in flavor than chicken eggs and have a creamier texture. And I have some more nutritional facts for you about duck eggs:
- As I mentioned earlier, duck eggs have twice the nutritional value of a chicken egg and stay fresher longer because of their thicker shell.
- Duck eggs are richer with more Albumen making cakes and pastries fluffier and richer.
- Duck eggs boost your vitamin intake and provide considerable amounts of vitamins A and B-12.
Having said this, the yolk does contain about a 1 day supply of Cholesterol, which is pretty high. Imagine if McDonald’s made egg McMuffins with duck eggs?…Then we would have a problem.
Duck eggs are more expensive than chicken eggs, but certainly worth keeping on hand. They are delicious. Give them a try!
