Every year, we vacation in Newport, Rhode Island. We rent the same house, and the very moment that we parked our car the first year and started to unpack, Sean and I looked at each other and said “this is the place where we will come back every year.” And we have.
And for the past nine years, this very spot has become our traditional summer vacation. We find solace here. The view is breath-taking. The smell and sound of the ocean is comforting. The house that we rent is tiny, no frills, and exactly what we want. The kids love it. We love it. And for the one vacation we take each year, it’s worth every penny we save to make this holiday happen.

This year, I want to share our vacation with all of you; bring you here with us and give you a taste of Newport life.
Of course, one of my favorite things to do to get ready for vacation, is to prep. I make a folder with different lists: grocery, to do, what each person needs to pack, recipes, and various other thoughts that are mindful. Food, naturally, is tops on the list. Being that Sean works nights and weekends on Broadway, we rarely get to eat together as a family. And, being that I love to cook, family meals are cherished on vacation.
This year, I was able to shop for ingredients from our garden, and from a couple farms in our neighborhood. I brought a huge basket full of tomatoes, bell peppers, green beans, and cucumbers, along with a basket full of herbs from my herb garden. I think we have enough tomatoes to last us the two weeks we’re here, so I do have a few tomato recipes to share with you. Among one, is simply a tomato sandwich with grilled corn mayo. And, of course, vacation wouldn’t be vacation without homemade ice cream. I made two flavors, but we dove into chocolate mint first. Here is the recipe.
