Almost Blizzard Brought Good Eats

Sometimes when a snow storm is expected, it is a welcomed chance to stay home and relax.  And sometimes, you reach your cap of snow days and two hour delays, and cabin fever sets in.

Well, I had a little of both this past Tuesday with the bombogenesis that never was — at least here in the Hudson Valley.  All in we received about 4 inches of the white stuff, but in preparation, I bought all kinds of food with only the best intentions in mind.

Turns out though, even with the best intentions I’m still a short order cook around here.  No worries.  I still made a couple recipes that I would love to share with all of you.

For starters, since I’ve cleaned off our elliptical, I thought it might be a good idea to start using it, and get better about eating a healthy breakfast.  So I decided to make my own Granola.

And YUM!  I like mine really crispy, and this Granola turned out deliciously.  Click here for the recipe.

Secondly, I wanted to make something that is hearty, yet fast and easy during the weekday morning frenzy.  Quiches are my go-to.  I make them all the time and have them on hand in the freezer.  They go straight from freezer to oven, and are ready in about 45 minutes.

But I needed something quicker.  Grab and go;  less time.  And the idea of Quiche Poppers came to my mind.  These took a little time to make on the front end, but honestly since I had the time and I love the prep, it’s all good in an hour’s work.

With the help of prepared pie crust and a cookie cutter, these Quiche Poppers turned out great.  And so cute.  Perfect to pull out of the freezer and heat in the oven for 10 minutes.  A hearty and savory breakfast that is quick on time, and long on taste!  Click here for the recipe.
