
As I have mentioned many times before, cooking while on vacation, for me, is a must. Cooking has always been an escape for me and I truly enjoy experimenting with local, fresh ingredients. And with two younger children and a evening view like this, it’s hard to entertain not enjoying a home cooked meal while staring off into the sunset.

Certainly, a benefit of vacationing at the same spot for 10 years is that local businesses get to know you. So, when I went into Anthony’s Seafood to grab some shrimp for dinner, they offered to sponsor a post and asked me to cook a seafood roundup using some of their fresh daily catches. (At this point, picture me doing back hand springs and offering to vacuum the guy’s living room with gratitude!)

Of course, I would love to cook a seafood platter!!
Out I walked with a lobster that I cooked like this.

And some oysters that I fried up and turned into a Po Boy.

Some lump crab meat that made some delicious Crab Cakes.

Scallops that I wrapped in bacon – because everything tastes better with bacon!

And the shrimp that I went in for originally. I grilled those for 2 minutes on each side and served with my delicious cocktail sauce.
We were all happy and very full campers that evening. And I mastered some delicious recipes to boot!
