Some nights when I’m trying to figure out what to make for dinner, I’ll stand there with the refrigerator door open and just stare.
I’d like to say that I’m organized and plan out my meals. And at times, I do. I make ahead and freeze. But the freezer inventory is low and I was left to stand and do something that I always preach to the kids not to do – think with the fridge open.
But when my wheels finally started turning, and I spotted that prepared pizza dough that I always seem to have on hand, calzones popped into my head.
Calzones are like quiches and soups – just about any combination of ingredients can be added to have a delicious outcome. Whenever I need to clean out the fridge and use up ingredients that are about to expire, I make quiche or soup, or in this case, calzones.
Honestly, calzones are so easy to make. Not a whole lot of effort and can be prepared in less than an hour, making them an easy week night meal. And too, calzones can be prepared ahead of time, and kept in the freezer for up to 3 months.
I have to say, I hit it out of the park with this recipe. The Sausage, Broccoli, & Herbed Goad Cheese Calzone.

This looks so delicious! I’ve never even thought about making calzones at home. I LOVE LOVE LOVE brocolli in my calzones though, so I will be trying this 🙂
