We love to entertain around here and have friends over for cocktails and conversation. And even with Sean’s nutty schedule of nights and weekends, we still manage to enjoy our friend’s company, weekly.
Though I dearly love our friends, I still do appreciate the quick “alert” call letting me know they’re on their way. It’s the unexpected pop in that throws me into a dither. Nonetheless, whether I receive an alerting phone call or not, I do make sure I’m at the ready, and have snacks on hand for last minute entertaining.
One very important detail that I have realized when last minute entertaining is involved, is that your guests are there to visit. Chit chat. Have a few laughs and relax a little. They are not expecting the grand appetizer menu that you tend to pressure yourself with. It’s the easy to grab snacks that are key, and so much appreciated.
For starters, always have a couple different kinds of flavored crackers on hand. My go-to are cheese phyllo crisps and a flavored wheat cracker. Hummus is always the perfect accompaniment for those crackers, and the store bought kind is delicious.
Then I like to have Pickled Cauliflower & Carrots. I love to serve something tart and tangy, and my recipe of Pickled Cauliflower & Carrots fits the bill. Don’t let the process of canning let you feel intimidated. It’s easy and the yield is ample.
