My dearest friend in the world has a summer house in Boothbay Harbor, Maine. When I go up to visit, this peaceful vision is right outside my window.
He lives on Lobster Cove and from every vantage point, it’s organic serenity. A replete feeling of decompression the minute my feet exit the car, and the anticipation of waking up to the humming engines of lobster boats is a calming salve.
An agenda never seems to stick on these visits; the impromptu, go with the flow, is the Maine mojo. But, one thing that is a guarantee, is enjoying an early morning coffee on the dock, and literally devouring the best muffins ever. This occurrence is every morning, without fail.
These said muffins come from a general store in East Boothbay, and of course their recipe is tight-lipped. They usually have around 5 different kinds of muffins to choose from, and my favorite is the Butter Rum Muffin.
I order two: one to savor with my coffee, and one eat slowly, and study bite for bite. A little research development on muffins. If all studying could be this delicious.
So I set out to create my own Butter Rum Muffin recipe, and I had huge shoes to fill. I scoured my cookbooks. Looked online. Tried a few. None came close.
So I added a little of this. Then a little more. Decreased a little of that. Added a few of these. Then the whole bag went in. And after 9 attempts, I had a winner.
I by no means want to have a throw down with the ladies of the East Boothbay General Store, but I do believe that my recipe of the Butter Rum Muffin is pretty darn close!!! Almost moan-worthy.
