If there’s one thing I can say about a particular favorite food of mine, it’s that I can eat soup every day of the year. The warmth and comfort of soup during the winter goes without saying, and even in the summer…
Fall is no different. Soup to me could easily equal three square meals a day. I guess I’m a soup freak? If that’s a label I have to take, I’ll take it.
But seriously, I love soup. And I’ll take soup any way I can get it: homemade, take-out and even store bought. I do prefer one over the other, but when the moment strikes, I like to make sure I have a few soup recipes in my repertoire.

I’m starting with my favorite, Beer Cheese Soup.
Let me talk to you just a minute about this recipe. First of all, it is comfort food at its finest. Beer and cheese go together like best friends, and add some pretzel bites to dip into the soup — well then you have just reached Xanadu minus the chintzy storyline. I spent hours creating this recipe, testing flavors and spices, making sure it was better than good enough to publish. The best for a fall day, and so fitting to serve on a lazy afternoon watching sports from the couch. No foul ball nor incomplete pass with this soup.
