Blini With Smoked Salmon
Ingredients
- 1 cup whole wheat flour
- 1 Tablespoon sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 beaten egg
- 1 cup whole milk
- 4 ounces smoked salmon
- Mascarpone cheese roughly 2 Tablespoons
Instructions
- For the blini:
- In a mixing bowl, stir together flour, sugar, baking powder and salt. In another mixing bowl, combine egg and milk. Add to flour mixture all at once, Stir mixture until blended.
- Pour about 1 Tablespoon batter onto a hot, lightly greased griddle pan or heavy skillet. Cook on medium heat until blinis are golden brown, turning to cook second sides when blinis have bubbly surfaces and slightly dry edges. Makes about 36 blinis.
- For the assembly:
- Lay the blinis in a single layer on a plate or tray. Spread just a smidgeon of mascarpone cheese on the center of each blini to use as a "glue" for the salmon. Take a slice of smoked salmon and cut it to 2 inches long. Fold into a bundle and place on top of blini. Top the smoked salmon with small dollop of mascarpone cheese and a sprig of dill.
