Raw Oysters with Champagne Mignonette

- 1/2 cup champagne vinegar
- 1 teaspoon red wine vinegar
- 1 tablespoon minced shallot
- 1/2 teaspoon minced garlic
- 1 teaspoon olive oil
- 1/2 teaspoon sugar
- salt and freshly ground black pepper to taste
Instructions
- Mix all ingredients in a small bowl. Let flavors blend for at least 2 hours before serving.
