The Basics

chicken brine

Ingredients:

2 gallons of water

3 lemons, cut in half and juiced

6 bay leaves

1/2 bunch of thyme

banner

1/2 bunch parsley

1 1/2 cups kosher salt

1/2 cup iodized salt

1/4 cup sugar

2 Tablespoons peppercorns

 

Combine all ingredients and stir until salt and sugar dissolve.

Chill before using.

The brine can be refrigerated for up to 3 days.

 

Turkey brine

Ingredients:

4 cups kosher salt

1 cup sugar

1/4 cup black peppercorns

4 bay leaves

2 gallons of water

1 large plastic bucket

Combine all ingredients and stir until salt and sugar dissolve.
