Chipotle-Maple Pork Tenderloin

- For the pork:
- 2 teaspoons ground coriander
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 2 pork tenderloins, silver skin removed
- 1 Tablespoon vegetable oil
- Kosher salt
- Freshly ground black pepper
- For the sauce:
- 1/4 cup Crown Maple Syrup
- 2 Tablespoons sherry vinegar
- 1 teaspoon chipotle powder
- 1/2 teaspoon Kosher salt
Instructions
- Position oven rack on second to the highest setting in the oven. Combine garlic powder, and ginger. Brush the tenderloins with the oil, and massage the spices all over the pork. Season with salt and pepper, to taste. Lay the pork on shallow baking sheets and broil until golden, turning once, about 5 minutes per side. An instant read thermometer should read 130 degrees when inserted in the thickest part of the pork.
- Meanwhile, make the sauce. Whisk the syrup, vinegar, chipotle powder and salt in a small bowl. Reserve half and set aside. Brush generously the rest of the sauce over the tenderloins, and return pork to broiler, turning once, until pork become a deep rich golden brown. This should take 2-3 minutes.
- Let pork rest 5 minutes before slicing. Serve with reserved sauce for drizzling over meat.
