Biscuits With Sausage Gravy Author: Farmhouse 1820
Ingredients
2 cups flour, plus 3 Tablespoons
1 tablespoon baking powder
2 teaspoons sugar
½ teaspoon cream of tartar
¼ teaspoon salt.
½ cup unsalted butter plus 3 Tablespoons
⅔ cup buttermilk
2 cups whole milk
1 pound bulk breakfast sausage
julienned spinach for garnish
Instructions
Preheat oven to 450 degrees.
In a bowl, combine flour, baking powder, sugar, cream of tartar and ¼ teaspoon salt. To that, cut in ½ cup unsalted butter until mixture resembles course meal. Add buttermilk all at once and stir until all mixture clings together.
On a lightly floured surface, knead dough a couple times, then roll out to ½ inch thickness. Cut into rounds and transfer to baking sheet. Bake in a 450 degree oven for 10 minutes or until golden.
For the sausage gravy:
Brown bulk sausage in a pan. Drain all but 2 tablespoons grease, and set aside. In a separate saucepan, melt 3 tablespoons butter. Add 3 tablespoons flour and whisk until well combined and mixture turns a pretty golden color. Add whole milk and stir constantly until sauce has thickened. Add sausage and reserved grease to white sauce, making a gravy.
Pour sausage gravy over biscuits and garnish with julienned spinach.
