It’s no secret around here that I love a good picnic. I’ll take any excuse to have a picnic – heck, I’ve even been known to set up and host a picnic on the kitchen floor in the middle of winter when there’s a blizzard going on outside. They almost seem like a lost art; time is short, life gets in the way and we constantly trip over our own feet. I want to bring back the lost art of having a picnic and in my opinion, fall is the best time of year to have one.
A table isn’t always necessary, I love going with the old fashioned blanket-on-the-ground kind of picnic. A couple bales of hay set the scene, as they make for good tables or even good seating. An antique quilt draped over is on stand by for a little added comfort while sitting, or to wrap up in if the breeze gets a little chilly.
Keep the menu simple. Panini’s are my go to picnic food and this kind is my favorite. It’s a grilled chicken with cheddar and apple panini. You can find the recipe here. Pressed and assembled at home and wrapped in parchment, a panini brings an elegant yet laissez faire vibe to the picnic.
Classic kettle cooked chips get their own jazz with sour cream and onion powders sprinkled over to create a semi-homemade spin on chips. Always my go to, just heat the chips in the oven for a few minutes, letting their oils come to the surface. Sprinkle on buttermilk powder (for the sour cream flavor), a sprinkling of dried dill and onion powder, and the flavors triumph. So addicting.
So pack a basket and head to one of your favorite spots and enjoy the colors of fall. It’s time to have a picnic!
