For the past couple months, I have been diligent about going on the elliptical at least four days a week, and with that I’ve been keeping a careful eye on what I eat. I’ve been making progress and have felt pretty proud of myself. However, all that careful eye and elliptical stuff went out the window this week thanks to a bad snow storm and some righteous cabin fever. Oddly enough, I felt like baking some cupcakes.
Since St. Patrick’s Day is right around the corner, I decided to try out a recipe that has been sitting on my desk for years (literally), and make a few tweaks to raise this recipe bar. The recipe is Guinness Stout cake, and whenever I seldom see a recipe combining the words cake and stout, I’m intrigued. Thing is, Guinness Stout and chocolate are like the perfect pairing. Truly. Each brings out the best in the other, bringing the end result in a moist and very chocolate-y deliciousness. The frosting is a chocolate ganache that is cooled to a spreadable consistency, making this recipe even more decadent.
The recipe doesn’t skimp on anything, yielding 18 large-sized cupcakes. Perfect to bring to work or school to share.
As for the elliptical, there’s always next week. But for now, I’m going to keep relish the goodness of these Guinness Stout Cupcakes. Click here for the recipe.
