Corned Beef Sliders

- Corned Beef, deli sliced
- Slider rolls
- 1 head napa cabbage, shredded
- 1/2 cup matchstick carrots
- 1 cup mayonnaise
- 1 1/2 Tablespoons apple cider vinegar
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/4 cup spicy brown mustard
- 1 Tablespoon honey
- 1 Tablespoon IPA beer
Instructions
- FOR THE COLESLAW:
- Place shredded Napa cabbage and carrots in a large bowl. In a separate bowl combine mayonnaise, apple cider vinegar, sugar, salt and pepper. Stir well, then add to cabbage mixture. Stir to thoroughly coat the cabbage.
- FOR THE MUSTARD:
- Combine spicy mustard, honey and IPA in a small bowl. Set aside.
- FOR THE SLIDER:
- Slice slider rolls in half. Spread mustard mixture over the top and bottom of the roll. Lay 3 or 4 slices of corned beef ( corned beef from the deli is fine!) on the bottom half of the roll. Top corned beef with a hefty scoop of coleslaw, then top with the other half of the roll.
