As the weather starts to get chilly, I can’t help but get a hankering for some comfort food. There are a number of recipes that I enjoy making once it gets cool out, but my ultimate favorite comfort food has to be chili. Whether I make a red-meat based kind, or one with ground chicken, both recipes fit the bill. Chilly weather calls for making chili, and there’s no time like the present to share two of my favorite recipes.
A recipe I have been making for years and I’m not sure why I haven’t shared until now, is my Chicken Chili recipe. One that comes together easily yet requires a long simmer, it’s not only delicious, but low in calories. It’s popular around the dinner table, and it’s become a clever way I can sneak in some spinach into the kid’s diet without them realllllllllly knowing. An added bonus is that it freezes well. Of course, when I think of chili, my Ultimate Chili image comes to mind. I grew up eating chili for dinner at least a couple times a month, and it was one of my favorite dishes my sweet Mama would make for us. I’ve taken her recipe and tweaked it up a notch.
