This is truly an easy dessert to make, even though it looks difficult. Hands on time is minimal, letting the oven take over and bake for an hour or so. The end result produces layers of sweet pumpkin-y flavor that is out of bounds. This is the perfect autumn and Thanksgiving dessert.

2eggs
1/3cupcanola oil
1tspvanilla extract
Bourbon Whipped Cream
1cupsheavy whipping cream
2tbsppowdered sugar
1tbspbourbonoptional
Extra Ingredients For Assembly
1bottlegood quality, store bought caramel sauce
1/4 cupgraham cracker crumbs
pumpkin pie spice
Instructions
Preheat oven to 350 degrees
Grease and flour loaf pan. Set aside.
In a large bowl, whisk together all of the dry ingredients.
Add pumpkin, eggs and oil to the dry ingredients.
Using the hand mixer, mix all ingredients on medium low speed, until well blended.
Pour batter into loaf pan.
Bake for 60-65 minutes or until a toothpick inserted near the center comes out clean.
Cool for 10 minutes on wire rack.
Run a knife around the sides of the pan to release bread. Remove from pan and cool thoroughly on wire rack.
Bourbon Whipped Cream
Pour whipping cream in a cold metal bowl.
Using a mixer, mix on high speed until soft peeks form.
Add sugar, then beat until stiff peeks.
Carefully fold in bourbon.
To Assemble The Trifle
Cut pumpkin bread into 1 inch cubes
Place one layer of pumpkin bread cubes on the bottom of the glass.
Drizzle caramel sauce over cubes.
Put a dollop of whipped cream on top.
Repeat layering until you've reached the top of the glass.
Finish with one final dollop of whipped cream, and garnish with a crumbled graham cracker crumbs and a sprinkling of pumpkin spice.
