Fill the sauce pan with 2 inches of water.
Place glass bowl over the water, making sure that the water doesn't touch the bottom of the bowl. If it does, just pour a little water out.
Unwrap each mint and place in the glass bowl. Turn heat on medium high, until water comes to a soft boil and the chocolate begins to melt.
In the meantime, line a baking sheet with waxed paper and set aside.
Stir the chocolate periodically, until chocolate is completely melted, then turn heat down to a simmer.
One by one, place a cracker in the chocolate, turning to coat with both forks. Use both forks to take the cracker out of the chocolate and place on waxed paper.
Repeat with remaining crackers until there isn't enough chocolate to coat a cracker.
Let the Chocolate Mint Ritz cool until chocolate is hardened. Store in airtight container for up to a week.
