Chocolate Mint Ritz Sweet Treat

If you close your eyes when you bite into one of these treats, you would think that you're biting into a Girl Scout Cookie. Made from just two ingredients, this is a recipe that everyone can get into making.

Equipment

  • medium glass bowl
  • medium sized sauce pan
  • baking sheet
  • waxed paper
  • two forks

Ingredients

  • 2 packages Andes Creme De Menthe Thins 56 individual mints total
  • 1 sleeve Ritz crackers approx. 24 crackers

Instructions

  • Fill the sauce pan with 2 inches of water.
  • Place glass bowl over the water, making sure that the water doesn't touch the bottom of the bowl. If it does, just pour a little water out.
  • Unwrap each mint and place in the glass bowl. Turn heat on medium high, until water comes to a soft boil and the chocolate begins to melt.
  • In the meantime, line a baking sheet with waxed paper and set aside.
  • Stir the chocolate periodically, until chocolate is completely melted, then turn heat down to a simmer.
  • One by one, place a cracker in the chocolate, turning to coat with both forks. Use both forks to take the cracker out of the chocolate and place on waxed paper.
  • Repeat with remaining crackers until there isn't enough chocolate to coat a cracker.
  • Let the Chocolate Mint Ritz cool until chocolate is hardened. Store in airtight container for up to a week.
