Melt butter in a skillet and add turkey and garlic. Cook until turkey is heated through. Stir in cashews. Remove from heat and let cool.
Transfer mixture to a food processor. Add mayo, cheese, sage and hot sauce, and process until smooth. Transfer to a small bowl. Cover with plastic wrap and chill at least 2 hours or overnight.
To serve, transfer pate to platter and shape into a loaf. Serve with crackers or party toast.
