Of all of my recipes on the blog, my duck sauce recipe is seriously one of my most popular. It gets several hits a day, and I’m so glad it does because no one should be eating the store bought kind. This recipe of mine is not only easy, but just dang good!
Whenever we order Chinese takeout, which I’m embarrassed to say is way more often than we should, there’s always a bazillion sauce packets in the bag – soy sauce, hot mustard and yes, duck sauce. And, since those duck sauce packets taste unbearably sweet and unflavorful, I had to test out and create a homemade version.
To start, I knew I wanted an apricot and plum base. This would be easy enough by using store bought jams in each flavor. I also knew that I wanted a hint of ginger and a hint of garlic in my recipe. Both would bring depth to the sauce. With these core ingredients in check, I got to work, testing.
I tested out a couple ways to make homemade duck sauce; one way by combining all ingredients in a bowl and whisking together. It was good, but not great. The sauce had a consistency that I didn’t care for, and the flavors weren’t as intense as I had wanted. This brings me to the second way; combining all ingredients in a saucepan, and cooking on a medium low flame until the preserves melt and the flavors marry. This proved to be the winner.
