I always have the best intentions when I try to watch what I eat. But truthfully, the word diet has never worked for me.
Nor has the word cleanse.
Like the time Sean and I went on a juice cleanse and I lasted about 5 hours before I sneaked a cracker.
Or even just yesterday morning, I was watching the Today show and they started a 10 day no sugar diet.
I thought to myself, “I should do that.” I need to cut out my sugar intake. I need to eat more fruits and vegetables and cut out the processed stuff.
So I looked straight to the peaches. We had lots and since they’re in season and so versatile, I wanted to go peachy. I needed savory and satisfying.
I turned to my grill to help me out. Like many fruits, peaches are so delicious when grilled.
I grilled them up, brought them in, and the Today show idea when straight out the window. I had some mascarpone in the fridge looking at me, waiting to be paired with something.
And I made this recipe. And with no problem nor tinge of guilt, I mixed in some powdered sugar.
And as if that wasn’t enough, I added some grilled peaches to a bowl of vanilla ice cream. Yum-O.
Grilled peaches add great flavor to so many dishes. Maybe I should entertain another diet. Seems diets inspire me to come up with some amazing recipes. Not that there’s anything wrong with that…
