I love a good hack, especially when it involves one my favorite cookies of all time, the Girl Scout Thin Mint. Just the thought of trying to recreate this recipe, that by all means is a classic, and make a successful riff wasn’t even something I could fathom. My cookie making block is much too elevated, and my baking vibes in general, are just so-so. This hack is a game changer.
It was last year, or maybe even the year before, I was watching a story on Instagram of an account that I follow. He was gabbing about how he likes to have late night snacks or something…….Anyway, he ended up making this hack, at like, 2 in the morning, that he found on some social media platform as well. Long story short, I don’t know where this hack originated, but whomever came up with it is a genius.

Girl Scout Thin Mint Hack Using Only 2 Ingredients
All you need for this recipe are Ritz crackers and a package of Andes Mints.
What You’ll Need:
Andes Mints and Ritz Crackers.
One package of Andes mints (28 pieces) coats between 10-12 Ritz crackers. Use this as your gage. I tend to melt 3 packages of Andes mints because we eat a lot of these cookies, and give a lot away as well.
I would like to recommend a baking accessory that is a strong workhorse in the kitchen. Whenever cooking in the oven, or baking, parchment paper sheets should always be on hand. Saves on sticking and certainly makes clean up so much easier. You can find my recommended parchment sheets HERE!
Here’s The Easy Peasy How-To
Line a baking sheet with parchment paper. Set aside.
Open one or two sleeves of the crackers and set aside.
Fill one third of a 3-quart saucepan with water.
Place a glass bowl over top.
Unwrap each mint and place in the bowl.
Place double boiler over medium heat and melt the mints, stirring occasionally until all is melted.
Once mints are melted, plop a ritz in the melted mint chocolate.
Using two forks, turn the cracker over, coating it completely, then place on parchment lined baking sheet to firm up.
Continue with additional crackers until there is not enough melted mints to coat any additional crackers. (You can always scrap the bowl and add to milk for an amazing minted hot chocolate…)
Once the chocolate has hardened, store in air-tight container for up to one week. That’s how easy this hack is! We cranked out 30 in less than 30 minutes.
Of all of the holiday sweet treats I happily pour a bit of time in to, these Girl Scout Thin Mint hacks are by far, my most popular, and they take the least amount of time to make.
So again, whomever came up with this hack, thank you from the bottom of my heart. You’re a genius.
