We were recently invited to a cocktail party, and were asked to bring a dessert.
I hemmed and hawed because I needed to make a dessert to feed about 50 people. I wasn’t the only one that was going to bring a dessert, so I wanted my dessert to be a little different. I’m not a big cake baker, so cute-over-the-top cupcakes were out. And I wanted to make something a little “dressier” than a cookie. On top of all this, I needed this dessert to be easy, and quick to make. So I stood there in my pantry and brainstormed.
I started thinking about how I love Rocky Road ice cream. I couldn’t bring ice cream to this hootenanny, but what if I came up with a Rocky Road that didn’t need to stay frozen, and that one could eat with their hards, if they so choose.
And the Rocky Road Dessert was born(ish).
I had a jar of those large marshmallows in my pantry, and I had chocolate and peanuts, too. That’s all I needed.
A little chop chop here. Little melt there. Dip. Dip. And presto, pretty-o.
These Rocky Roads were a hit at this party. No doubt they will be a hit the next time I serve them as well.
This just goes to show that you don’t need fancy ingredients to make a pretty and delicious dessert!
