As we enter the final days of summer, I’m trying to hold on for as long as I can, enjoying the fresh summer food. And corn just so happens to be one of my favorite things to eat during the summer.
And so as I hold on to summer, I decided to make a corn chowder. Not just any corn chowder, but a corn is the dominate flavor; not competing with the cream or potatoes.
I went to my go-to cooking guide of America’s Test Kitchen and checked out their recipe. Although their recipe was good, I wanted more corn umph. So I decided to make a corn stock to get that enhancement that I craved. And it worked. I also added a little bacon to the recipe because we all know that bacon makes everything better!
