You don’t have to ask me twice to make one of my Mexican favorites. Honestly, I could probably eat Mexican food morning, noon and night.
So in celebration of Cinco de Mayo, I would like to share one of my go-to Mexican faves. It’s a recipe that I first found in Cook’s Illustrated, naturally, that I have adapted to my own.

These Chopped Pork Tostadas are delicious!
They do take a little time to make, but the time spent is so worth it. Spicy, but not too spicy, these are always a hit, even as leftovers. Click here for the recipe.
And what’s also great is that this chopped pork isn’t limited to tostadas. You can also serve as a mini taco salad appetizer.
Just fill those scoop chips with the chopped pork and toppings, and these one bite wonders will wow your guests!
