As the weather starts to get chilly, I can’t help but get a hankering for some comfort food. There are a number of recipes that I enjoy making once it gets cool out, but my ultimate favorite comfort food has to be chili. Whether I make a red-meat based kind, or one with ground chicken, both recipes fit the bill. Chilly weather calls for making chili, and there’s no time like the present to share two of my favorite recipes.
A recipe I have been making for years and I’m not sure why I haven’t shared until now, is my Chicken Chili recipe. One that comes together easily yet requires a long simmer, it’s not only delicious, but low in calories. It’s popular around the dinner table, and it’s become a clever way I can sneak in some spinach into the kid’s diet without them realllllllllly knowing. An added bonus is that it freezes well. Don’t mind if I do. Click here for the recipe.
Of course, when I think of chili, my Ultimate Chili image comes to mind. I grew up eating chili for dinner at least a couple times a month, and it was one of my favorite dishes my sweet Mama would make for us. I’ve taken her recipe and tweaked it up a notch. This recipe freezes well also, and is the perfect weeknight meal to enjoy on a cozy night by the fire. Click here for the recipe.
Give these recipes a shot; they’re perfect comfort food for those cooler nights ahead.

I’ve been making your Ultimate Chili since I first saw your recipe on your blog. It is a family favorite around here. And I’m thrilled that the cooler weather has arrived, so I can finally make it again. To me, chili is a cool weather dish, so I only make it fall to spring. Thanks again for a fantastic recipe!! 😉

I made the chicken chili last night and it was delicious! I had ground turkey in the fridge so I substituted that for the ground chicken and it work well! Thank you for sharing this recipe! I am so excited to eat the leftovers today!
