This past weekend, my little helpers and I stayed with tradition and went apple picking. It was one of those days where I found myself trying to keep up.
Trying to keep up because I was having a happy parent moment where I was enjoying watching my little helpers having so much fun. They were climbing trees and eating apples, and tossing apple upon apple into our half bushel bag. And I just wanted to take in the moment. Savor.
And then there was the part of me that couldn’t keep up because the apple bag was getting pretty dang heavy. Overflowing, too.
Back at home, after I had washed the apples and they were displayed in a big wooden basket – that’s when it sank in that we had the apple load in our kitchen. My eyes started swirling around like the Grinch’s when he thought about all the Who noise..
So. Many. Apples.
I diced up a couple, and made a Chicken Salad with Apples and Candied Pecans.
We had picked some really small ones, and I candied those, and then looked and tasted like Candied Apple Gems.
I have Apple Butter slow cooking away in the crock pot as I type. If all goes well, I will be sharing that recipe later this week.
Needless to say, we still have a lot of apples left to eat. And it’s pretty much a guarantee that an apple will be included in Mac’s and Caroline’s lunches everyday.

I absolutely love apple season. I just started making chicken salad with apples earlier this summer. I’m hoping your apple butter comes out well, because I’d love a recipe for that one!
